With Tomato Fiaschetto extract from Torre Guaceto, Presidio Slow Food. Rich in carbohydrates and proteins, of great nutritive power, and in vitamin C, of antioxidant action. Its extract comes from the pulp contained inside, with excellent toning and nourishing properties. This tomato, sweet and juicy, is part of the gastronomic history of these lands: it was the basis for the tomato sauce that all families, even the most urban, self-produced for the winter. However, despite these roots, the "aschetto" tomato had all but disappeared: too expensive to grow and too scarce the amount of harvest compared to modern hybrids for tomato sauce. Thanks to a thorough search in the private gardens of the Torre Guaceto area, aschetto plants were found, thanks to which it was possible to reintroduce this valuable tomato variety.
